The part that got me the most was this:

The gluten molecules will dock where endorphins are supposed to dock. In effect, the gluten blocks endorphins and the positive feelings they can give us."
Translation: Gluten leaking into your system can turn you into an angry, moody, unhappy beast! Whoa. No wonder I felt so out of control.
